PIA with Plex Remote Access

So I know there's a lot of posts out there involving PIA and port forwarding to get the remote access feature on Plex to work but I've come up empty handed with results. 

I'm not that great with software! Port forwarding and script configuration has me a little in over my head. I was hoping someone could help me out and maybe give me a step by step "VPN for dummies" kind of walkthrough for this problem, getting my Plex Server around my VPN (or is it through... you know whatever).

I'm running my PIA VPN on my desktop and I'm using a port forwarding server (CA- North York). I can see on the tooltip that the port is being forwarded (but it changes every time it disconnects or restarts so that's another problem). I also have a Arris router so when it comes to port forwarding their software isn't that.... idiot friendly I guess would be the best way to put it.
